Sprouts and Chickpeas Salads for Mums
After we become mothers, most of us tend to ignore self and by the time we realize it we are usually at a point where we are desperate. Here is a healthy recipe for new and seasoned mums to start their day with a healthy low-calorie, fibre-rich and protein-packed breakfast which is equally yummy.
1 cup moong bean sprouts
½ cup soaked and boiled chickpeas
1 medium onion finely chopped
1 medium tomato finely chopped
2 tbsp finely chopped capsicum
1 tbsp lemon juice
1 tsp Extra-virgin olive oil
Black salt to taste
Black pepper/ chilli flakes to taste
Make the dressing by beating the ingredients for dressing together. Keep aside.
Lightly boil the mong bean sprouts for 4-5 minutes in an open pan with just enough water. You can also steam them.
In a large bowl mix sprouts, boiled chickpeas, onions, tomatoes and capsicum using a large spoon.
Add the dressing and toss the salad well. Serve chilled or at room temperature.
P.S. You may easily change the dressing, but keep it light. Fresh and dried herbs also go well in this salad.
